100 g mature pancake batter starter
25 g rye flower
25 g whole wheat flower
50 g flower
100 g water

Pancake batter
2 large eggs
245 g whole milk
250 g sourdough starter
4 g vanilla (optional)
180 g flour (mix)
6 g baking soda
4 g baking powder
5 g sea salt
50 g granulated sugar
63 g melted butter

beat the eggs. Add milk, sourdough starter, and optional vanilla. Stir to incorporate.

Sift together flour, baking soda, baking powder, salt, and sugar. Add dry mix to the egg mixture, mixing well. Stir in melted butter. Wait about 30 minutes to let sourdough starter get going just a bit.
